Spanish Tortilla

Spanish tortilla, also known as tortilla de patatas or tortilla española, is a traditional Spanish dish. It is a simple and delicious omelet-like dish made with eggs, potatoes, onions, and olive oil. The basic ingredients are sliced potatoes that are lightly fried in olive oil, along with onions, and then mixed with beaten eggs and cooked until set. 

Ingredients

4-5 medium potatoes, peeled and thinly sliced

1 onion, thinly sliced

6 large eggs

Salt and pepper to taste

Olive oil

 

Instructions

Heat about 1/2 cup of olive oil in a non-stick skillet over medium heat. Add the sliced potatoes and onions to the skillet. Cook, stirring occasionally, until the potatoes are tender but not browned, about 15-20 minutes. Remove from the heat and let the potatoes and onions cool slightly.

In a large bowl, beat the eggs and season with salt and pepper.

 

Add the slightly cooled potatoes and onions to the bowl with the beaten eggs. Gently fold the mixture together until the potatoes and onions are evenly coated with the eggs.

 

In the same skillet used to cook the potatoes, add 2-3 tablespoons of olive oil and heat over medium heat. Pour the potato and egg mixture into the skillet, spreading it out evenly. Cook for about 4-5 minutes, or until the edges start to set.

 

Now comes the tricky part – flipping the tortilla. Place a large plate over the skillet and carefully invert the skillet so that the tortilla ends up on the plate. Then, slide the tortilla back into the skillet, uncooked side down. Cook for an additional 4-5 minutes, or until the tortilla is completely set and slightly golden on the outside. You can slightly jiggle the skillet to make sure the tortilla is not sticking.

 

Once the tortilla is cooked through, transfer it to a serving plate and let it cool to room temperature. The tortilla can be served warm or at room temperature, cut into wedges.
