Mac and Cheese Bites

Mac and cheese bites are a popular appetizer or snack made from macaroni and cheese that has been formed into small portions, coated in breadcrumbs, and then deep-fried or baked until crispy. They are typically served with a dipping sauce and are known for their creamy, cheesy interior and crunchy exterior. 

 

Ingredients

2 cups cooked macaroni

1 1/2 cups shredded cheddar cheese

1/2 cup milk

2 tablespoons unsalted butter

1/4 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

2 eggs, beaten

1 cup breadcrumbs

Oil for frying

Instructions

In a saucepan, melt the butter over medium heat. Once melted, stir in the flour to create a roux. Cook and stir for 1-2 minutes to remove the raw flour taste.

Gradually whisk in the milk to create a smooth sauce. Continue to cook and stir until the mixture thickens.

Reduce the heat to low and add the shredded cheddar cheese, salt, pepper, and garlic powder. Stir until the cheese is melted and the sauce is smooth.

Remove the cheese sauce from the heat and stir in the cooked macaroni until well coated.

Transfer the mac and cheese mixture to a shallow dish and refrigerate for at least 1 hour, or until it is firm enough to handle.

Once the mac and cheese mixture is firm, use a spoon or a small cookie scoop to form it into small balls, about 1 inch in diameter.

Dip each mac and cheese ball into the beaten eggs, then roll it in the breadcrumbs until evenly coated. Place the coated balls on a plate or baking sheet.

Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (180°C). Carefully place a few mac and cheese bites into the hot oil and fry until golden brown, about 2-3 minutes. Be sure not to overcrowd the pot.

Remove the fried mac and cheese bites with a slotted spoon and place them on a paper towel-lined plate to drain.

Serve the mac and cheese bites while hot, optionally with a side of marinara sauce or ranch dressing for dipping.
