Meatloaf

With mashed cauliflower, avocado, and corn is a delicious and well-balanced meal. Here’s a simple recipe you can use to create this dish.

Meat loaf Ingredients

1 ½ pounds ground beef

1 cup breadcrumbs

1 small onion, finely chopped

2 cloves garlic, minced

1 egg

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

½ cup ketchup

Mashed Cauliflower

Ingredients

1 head of cauliflower, cut into florets

2 cloves garlic, minced

2 tablespoons butter

– Sea salt and pepper to taste

Avocado and Corn

Ingredients

2 ripe avocados, diced

1 cup corn kernels (fresh, canned, or frozen)

Sea salt and pepper to taste

Lime juice (optional)

Meatloaf Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic, egg, Worcestershire sauce, sea salt, and pepper until well combined.

Shape the mixture into a loaf and place it in a baking dish.

Spread the ketchup over the top of the meatloaf.

Bake for 1 hour, or until the meatloaf is cooked through.

Cauliflower Instructions

Steam or boil the cauliflower until tender.

Drain the cauliflower and transfer it to a large bowl.

Add the minced garlic, butter, sea salt, and pepper to the bowl.

Use a potato masher or immersion blender to mash the cauliflower until it reaches your desired consistency.

Avocado and Corn Instructions

In a bowl, combine the diced avocado and corn.

Season with sea salt, pepper, and a splash of lime juice if desired.

To serve, slice the meatloaf and place it on a plate alongside a serving of mashed cauliflower and the avocado and corn mixture. This meal provides a balance of protein, healthy fats, and vegetables, making it a nutritious and satisfying option. Enjoy!
