Salmon Gravlax
Gravlax is a traditional Nordic dish of raw salmon that has been cured in salt, sugar, and dill. The name gravlax comes from the Scandinavian word “gravad lax,” which means “buried salmon.” Historically, the salmon was cured by burying it in the sand above the high tide line, but nowadays it is usually cured in a mixture of salt, sugar, and dill in the refrigerator.
