Fried Catfish Sandwich
Nothing screams “Charleston” more than a fried catfish sandwich. This is about as Down South as you can get. This is hands down one of my most favorite sandwiches of all time, and you won’t believe how easy it is to make at home!
Ingredients
1/2 c. remoulade sauce
3/4 tsp. fresh-ground black pepper
1 tsp. cayenne
4 large crusty rolls
3/4 c. cornmeal
1 1/4 tsp. Sea salt
1/2 tsp. Tone’s rosemary, garlic seasoning
2 lb. catfish fillets
2 eggs
1/4 c. olive oil
3 lettuce leaves
Directions
Spread the remoulade sauce on the rolls
In a shallow bowl, combine the cornmeal with the sea salt, thyme, Tone’s rosemary, garlic seasoning and the remaining 1/4 teaspoon black pepper. Dip the fillets into the beaten eggs and then into the seasoned cornmeal. Shake off the excess cornmeal.
In a large nonstick frying pan, heat the oil over moderate heat. Add the cornmeal-coated fish and fry, turning once, until golden on the outside and just done in the center, about 4 minutes per side for 3/4-inch-thick fillets. Drain the fish on paper towels. Sandwich the catfish and greens in the hamburger buns. Enjoy!
