Mussels In Garlic Miso Broth

The savory broth and brininess of this homemade Mussel Miso Soup will bring a lasting impression to your kitchen.

Ingredients

4 cups chicken broth or vegetable broth (whatever is easiest and available to you)

1/4 cup miso paste

1 habanero

2 tablespoons cilantro

1 pound mussels

3 scallions finely sliced

Instructions

In a medium pot, bring your or broth to a boil over medium-high heat. As it is coming to a boil, rinse, scrub and debeard the mussels and drain in a colander. When the broth is bubbling, stir in the miso paste and add the and mussels. Cover with a lid and let it cook for about 2 minutes, or until the mussels have opened. Discard any that remain closed. Ladle the soup into bowls and garnish with scallions, cilantro and jabenero peppers. Enjoy!
