Caesar Salad

A Caesar salad is a type of salad that typically consists of romaine lettuce, croutons, Parmesan cheese, and a dressing made from a blend of olive oil, lemon juice, garlic, Dijon mustard, Worcestershire sauce, and anchovies. The salad is named after its creator, Caesar Cardini, an Italian-American restaurateur who invented the dish in Tijuana, Mexico in the 1920s. The salad is often served as a side dish or as a main course with the addition of grilled chicken or shrimp. It’s a popular dish in many restaurants and is easy to make at home.

Ingredients

3 tablespoons plus 1/4 cup extra-virgin olive oil

 

2 medium cloves garlic, minced

 

2 ounces finely grated Parmesan cheese (about 1 cup)

 

Sea salt and freshly ground black pepper

 

1 large egg yolk

 

1 tablespoon juice from 1 lemon

 

2 to 6 anchovies 

 

1 teaspoon Worcestershire sauce 

 

2 heads romaine lettuce, inner leaves only, washed and carefully dried, large leaves torn into smaller pieces, smaller leaves left intact

 

One bag of croutons

Instructions

Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, pressed garlic, and 1/4 cup Parmesan cheese in the bottom of a cup that just fits the head of an immersion blender or in the bottom of a food processor.

 

With blender or processor running, slowly drizzle in olive oil until a smooth emulsion forms.

 

Transfer mixture to a medium bowl.

 

Whisking constantly, slowly drizzle in remaining 1/4 cup extra-virgin olive oil.

 

Season to taste generously with salt and pepper. Enjoy!
