The iconic Hawaiian comfort food — a savory, satisfying dish featuring rice, a juicy hamburger patty, rich brown gravy, and a fried egg on top.

 Where it began:
The Loco Moco was created in Hilo, Hawaii, in the late 1940s at the Lincoln Grill Café. Local teenagers from the Lincoln Wreckers sports club asked the café owners, Nancy and Richard Inouye, to make something cheap, filling, and different from the usual sandwich.

The result:

  • A scoop of steamed white rice
  • hamburger pattyplaced on top
  • Covered in rich brown gravy
  • Finished with a fried egg

The teens named it “Loco Moco” — “Loco” (Spanish for “crazy”) was a nickname of one of the boys, and “Moco” was added just because it rhymed. Despite its funny name in Spanish, the dish became a symbol of Hawaii’s multicultural, post-war “local grindz” culture — hearty, inexpensive, and rooted in community.

Cultural Significance

The loco moco embodies Hawaii’s melting-pot cuisine — a blend of Asian, Pacific Islander, and American influences. It’s found in diners, school cafeterias, and fine dining restaurants alike, often served with macaroni salad or fried rice on the side.

Traditional Loco Moco Recipe

Ingredients

For the Hamburger Patties:

  • 1 lb ground beef (80/20 blend recommended)
  • ½ small onion, finely minced
  • 1 egg
  • ¼ cup panko breadcrumbs (optional for tenderness)
  • 1 tbsp soy sauce
  • Salt and black pepper to taste
  • 1 tbsp oil (for frying)

For the Gravy:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

For the Rice and Topping:

  • 3 cups cooked white rice (short or medium grain preferred)
  • 4 large eggs
  • 1 tbsp butter or oil (for frying eggs)
  • Optional garnish: chopped green onions or fried onions

 

Instructions

  1. Make the Patties
    • In a large bowl, combine ground beef, onion, egg, panko, soy sauce, salt, and pepper.
    • Mix gently until combined — don’t overmix.
    • Form into 4 equal patties.
    • Heat oil in a skillet over medium-high heat and cook patties for 3–4 minutes per side, or until browned and cooked through.
    • Remove and keep warm.
  2. Prepare the Gravy
    • In the same pan, melt butter over medium heat.
    • Whisk in flour and stir for 1–2 minutes to form a roux.
    • Gradually whisk in beef broth, stirring constantly until smooth.
    • Add soy sauce and Worcestershire sauce. Simmer 3–5 minutes until thickened.
    • Season with salt and pepper to taste.
  3. Cook the Eggs
    • In a separate pan, fry eggs sunny-side up or over-easy in butter or oil.
  4. Assemble the Loco Moco
    • Scoop a generous serving of rice into each bowl or plate.
    • Top with a hamburger patty.
    • Pour rich brown gravy over the top.
    • Place a fried egg on each patty.
    • Garnish with green onions if desired.

Optional Additions

  • Add sautéed mushrooms to the gravy for an extra earthy flavor.
  • Substitute brown rice or fried rice for a twist.
  • Add a dash of hot sauce for heat.
