Southern Boiled Peanuts

Boiled peanuts have their origins in West Africa, where people traditionally boiled legumes like bambara groundnuts and other local nuts in salted water. Enslaved Africans brought this culinary method to the American South during the transatlantic slave trade.

In the United States, particularly in South Carolina, Georgia, Alabama, and Florida, the tradition of boiling raw or green peanuts in salted water became a staple—especially in late summer and early fall, when fresh, moist peanuts are harvested.

Over time, boiled peanuts became deeply rooted in Southern food culture, often sold at roadside stands, festivals, and ballgames. In fact, South Carolina even designated boiled peanuts as the official state snack in 2006.

So while today they’re seen as a Southern delicacy, boiled peanuts are a blend of African culinary heritage and American agricultural tradition.

Ingredients:

  • 2 lbs raw peanuts (green or raw, in the shell)
  • 1/2–3/4 cup sea salt (adjust to taste)
  • Water (enough to cover the peanuts by 2–3 inches)
  • Optional:
    • 1–2 tbsp Cajun seasoning or crushed red pepper flakes for a spicy kick
    • 2–3 cloves garlic
    • 1 bay leaf

Instructions:

  1. Rinse the peanuts well under cold water to remove dirt and debris.
  2. Place peanuts in a large pot and cover with water (at least 2–3 inches above peanuts).
  3. Add salt and any optional seasonings you prefer.
  4. Bring to a boil, then reduce heat to a simmer.
  5. Simmer coveredfor 2 to 4 hours (or longer for firmer shells), checking water levels occasionally. Add more water if needed to keep peanuts submerged.
  6. Taste test for salt and doneness—they should be soft but not mushy, and the flavor should be salty all the way through.
  7. Turn off the heat and let them soak in the brine for another hour or more for extra flavor.

Storage:

  • Store in the brine in the fridge for up to 1 week.
  • Can also be frozen (in brine) for several months.
