  • 1 cup corn (frozen or canned, drained)
  • 1 cup diced tomatoes or salsa

  • ½ cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro, chopped (optional)
  • Lime wedges

Optional Toppings:

Instructions
