Ingredients

1 lb steak (such as ribeye, sirloin, or flank steak)

1 can black beans, drained and rinsed

1 cup white rice

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup roasted corn (you can use frozen roasted corn or roast fresh corn kernels)

1 cup shredded cheddar cheese

Chimichurri sauce 

For the steak marinade

2 cloves garlic, minced

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Sea salt and pepper to taste

Instructions

In a bowl, mix together the ingredients for the steak marinade. Place the steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes to marinate.

Cook the white rice according to package instructions. Keep warm.

Preheat your grill to high heat. Grill the steak to your desired level of doneness (usually about 4-5 minutes per side for medium-rare, depending on the thickness of the steak). Remove from the grill and let it rest for a few minutes before slicing.

In a large skillet, sauté the sliced bell peppers until they are slightly softened.

In the same skillet, add the drained and rinsed black beans and roasted corn. Cook until heated through.
