Barbecue Chicken Breast Kebabs

Kebabs, also known as skewers or shish kebabs, are believed to have originated in the Eastern Mediterranean and Middle Eastern regions, where small pieces of meat were skewered and cooked over an open flame. These cooking techniques were likely developed as a way to make tough cuts of meat more tender and flavorful.

Ingredients

1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 red onion, cut into chunks

Wooden or metal skewers

For the marinade

1/4 cup olive oil

1/4 cup barbecue sauce

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Instructions

In a bowl, whisk together all the marinade ingredients until well combined.

Place the chicken cubes in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well coated. Marinate in the refrigerator for at least 1 hour, or ideally overnight for the best flavor.

If you’re using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.

Preheat the grill to medium-high heat.

Thread the marinated chicken, bell peppers, and onions onto the skewers, alternating the ingredients.

Grill the kebabs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serve the barbecue chicken kebabs hot off the grill with your favorite sides, such as rice, salad, or grilled vegetables.
